Asian Slaw

Serves 8-12

Ingredients

  • 1 bag coleslaw mix
  • 1 bag broccoli slaw
  • 4 or 5 green onions, trimmed and sliced
  • 1/2 red onion, thinly sliced
  • 1/2 unsalted sunflower seeds
  • 2/3 cup slivered almonds
  • 1/2 Tablespoon butter
  • 1/4 cup canola or safflower oil
  • 1/4 cup lemon juice
  • 3 Tablespoons soy sauce
  • 3 Tablespoons white or rice vinegar
  • 2 Tablespoons grated fresh ginger
  • 2 Tablespoons brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon dry English mustard (or whatever you have on hand)
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions

  1. Heat butter in small skilled over medium heat and add slivered almonds, stirring occasionally until toasted.
  2. Mix slaws, onions, toasted almonds, and sunflower seeds in a large bowl.
  3. Whisk together remaining ingredients in small bowl and pour over slaw mixture. Toss well to coat.
  4. Refridgerate 20-30 minutes to develop flavors (optional). Toss again before serving.
