Lemon Buttermilk Cookies

These cookies are amazing. I like to freeze the ones I don't eat right away and eat cold later. Yum!

Makes about 30 cookies

Ingredients

    Cookies
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon grated lemon zest
  • 1/4 teaspoon baking soda
  • 3/4 stick unsalted butter, softened
  • 3/4 cups granulated sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/3 cup buttermilk
  • Glaze
  • 3/4 cup confectioners sugar
  • 1-1/2 tablespoons buttermilk
  • 1/4 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 ° F.
  2. Whisk together flour, zest, baking soda, and salt.
  3. Beat together butter an sugar until pale and fluffy. Add egg and vanilla, beat well.
  4. Mix in flour mixture and buttermilk, alternately, until smooth.
  5. Drop in level tablespoons 1-1/2 inches apart on buttered baking sheets.
  6. Bake until puffed and edges are golden, 12-15 minutes. Cool for a minute on cheet, then transfer to racks.
  7. Glaze cookies: Whisk together glaze ingredients and brush onto tops of warm cookies.
  8. Let stand until cookies are cooled and glaze is set.
