Lemon Buttermilk Cookies
These cookies are amazing. I like to freeze the ones I don't eat right away and eat cold later. Yum!

Makes about 30 cookies
Ingredients
Cookies
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon grated lemon zest
- 1/4 teaspoon baking soda
- 3/4 stick unsalted butter, softened
- 3/4 cups granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/3 cup buttermilk
Glaze
- 3/4 cup confectioners sugar
- 1-1/2 tablespoons buttermilk
- 1/4 teaspoon vanilla extract
Directions
- Preheat oven to 350 ° F.
- Whisk together flour, zest, baking soda, and salt.
- Beat together butter an sugar until pale and fluffy. Add egg and vanilla, beat well.
- Mix in flour mixture and buttermilk, alternately, until smooth.
- Drop in level tablespoons 1-1/2 inches apart on buttered baking sheets.
- Bake until puffed and edges are golden, 12-15 minutes. Cool for a minute on cheet, then transfer to racks.
- Glaze cookies: Whisk together glaze ingredients and brush onto tops of warm cookies.
- Let stand until cookies are cooled and glaze is set.
