Guacamole
Perfect for when the avocadoes come in by the truckload. I've been known to just eat a batch of this as a meal. I tend to always have fresh salsa on hand during the summer, so this guac is a breeze.
Makes approx. 1 cup per avocado
Ingredients
- Ripe avocadoes (as many as you want)
- 1/4 cup of fresh salsa per avocado
- Fresh cilantro (optional)
Directions
- Peel, de-seed, and roughly chop avocadoes and put in bowl.
- Mash with a fork (if they don't mash easily, they aren't ripe enough)
- Add 1/4 cup salsa per avocado (or to taste) and stir well.
- Add extra minced cilantro as garnish, and for general goodness. Enjoy!
