Quick Veggie Rice Bowl

Serves 2 generously

Ingredients

  • 3 stalks celery, chopped
  • 2 big handfuls sugar snap peas, chopped
  • Handful of bean sprouts
  • 1 8oz can sliced water chestnuts, drained
  • 1 8oz can sliced bamboo shoots, drained
  • Handful cashews
  • Handful raisins
  • 2 cups cooked rice
  • Sauce
  • 3/4 cup orange juice
  • 3 Tablespoons soy sauce
  • 2 Tablespoons brown rice vinegar
  • 1/2 Tablespoon sesame oil
  • a few dashes of hot sauce

Directions

  1. Mix orange juice, soy sauce, vinegar, oil, and hot sauce in small pan and heat through on stove. (Or microwave for 1 1/2 minutes in small bowl or pyrex measuring cup.)
  2. Divide rice into bowls. Top with cashews, then raisins, then celery, peas, water chestnuts and bamboo shoots.
  3. Pour sauce over ingredients in bowls and top with bean sprouts.
