
Quick Veggie Rice Bowl

Serves 2 generously
Ingredients
- 3 stalks celery, chopped
- 2 big handfuls sugar snap peas, chopped
- Handful of bean sprouts
- 1 8oz can sliced water chestnuts, drained
- 1 8oz can sliced bamboo shoots, drained
- Handful cashews
- Handful raisins
- 2 cups cooked rice
Sauce
- 3/4 cup orange juice
- 3 Tablespoons soy sauce
- 2 Tablespoons brown rice vinegar
- 1/2 Tablespoon sesame oil
- a few dashes of hot sauce
Directions
- Mix orange juice, soy sauce, vinegar, oil, and hot sauce in small pan and heat through on stove. (Or microwave for 1 1/2 minutes in small bowl or pyrex measuring cup.)
- Divide rice into bowls. Top with cashews, then raisins, then celery, peas, water chestnuts and bamboo shoots.
- Pour sauce over ingredients in bowls and top with bean sprouts.
