Fresh Salsa

This salsa is addictive, and also makes a base for homemade guacamole...yum.

Makes approx. 2 cups

Ingredients

  • 2 jalapeno peppers, de-seeded and minced
  • 1 Anaheim chile pepper, de-seeded and minced (or substitue one more jalapeno
  • 1 14oz. can diced tomatoes (for extra spicy, use tomatoes with green chilies)
  • 1/2 onion, chopped
  • Juice of 1/2 lime
  • fresh cilantro to taste (I'm a more is more kinda girl), minced
  • salt & pepper to taste

Directions

  1. Mix peppers and onion in food processor to chop them up really small and release juices.
  2. Add tomatoes and lime juice, then blend until well combined.
  3. Transfer to bowl and add cilantro, salt & pepper to taste
